Yup!  I made this!  And if I can do it, then you can, too.  I'm not much of a cook.  I didn't even know what Panko was.  1 1/2 lbs of shrimp is a LOT, easily enough for four adults, so know that going in.

My husband proclaimed this as "awesome" so I did a good job.  We also both agreed that it would be better to take the tail off.  It's just easier to eat.  I probably could have let them cook a little longer to get the coconut more golden, but some had started to burn on the edges of the baking sheet and I didn't want to risk it.
