I don't know if it'll surprise you that I'm Irish. On my dad's side. So some Irish things were prevalent in our home: Irish history, St. Patrick's Day, and food. My mom made corned beef and cabbage all the time and it always seemed to take soooo long. I don't have time for that. This recipe, from my friend, has only taken me 2 1/2 hours (as opposed to the 6 or more hours it would take my mom). And on a Sunday that's nothing. Especially if you're doing laundry and chores so you're stuck at home anyway.
