Horchata is a traditional Mexican drink made up of white rice soaked in water. It's flavored with cinnamon and its sweetened with granulated sugar. It's sweet and creamy, with a smooth texture, and a taste that is reminiscent of rice pudding. You can add alcohol if you'd like.
But in this version, we'll make it more festive flavored. You'll need these for your spiced pumpkin horchata:
- 1 ½ cups refrigerated rice milk or coconut milk
- 1 banana, peeled, cut up, and frozen
- ⅓ cup canned pumpkin
- ¼ cup cooked brown or white rice, chilled
- 2 tablespoons packed brown sugar
- 1 teaspoon vanilla
- ¼ teaspoon ground cinnamon
- ¼ cup (4 oz.) rum (optional)
- Ice cubes
- Cinnamon sticks (optional)
Directions
In a blender combine first seven ingredients (through cinnamon) and rum (if using). Cover and blend until smooth. Serve in ice-filled glasses. Add cinnamon sticks (if using) or sprinkle with additional cinnamon.
