Grilled Chicken Paillards with Mint Salad

I had to look it up.  A paillard refers to a boneless cut of meat that's been pounded until flat, then cooked rapidly.  Now, if you want to know what it actually means in French, it's "bawdy."  LOL!  Not sure why they picked that word for meat pounded flat, but then nobody asked me.
